Fix offline servicing so it doesn't show unapplicable updates
Whenever I use offline servicing to inject updates into a .wim, it always shows updates that I have previously tried to inject that have not been applicable.
It would be much better if it would properly scan and record what updates were previously unapplicable and not show you them anymore.

This is not possible. The only way to truly know what updates are truly applicable is by running a software update scan on a running OS. Since the OS is offline, a proper software update scan cannot be done. The only applicability rules that are used with offline servicing are at a very high level, e.g. "show me all Windows 10 updates".
