When updating a wim file there should be an option to update to the latest upgrade.

As Jason states this is how the Windows 10 serving model is built. There’s nothing we can change about it with Configuration Manager.
Could we have one or all of these features?
1) A built-in dynamic collection for just computers that are in Pending Reboot Status
2) Under The Monitoring section under Client Status - Include a Pending Reboot table of some sorts.

I’m going to decline this for now (given you know the 0-vote system to get my attention), to give you quick feedback. This is an interesting idea; but not something we could make work. Reboot notifications are through the fast channel, and thus too volatile – and would stress colleval out if a dynamic collection was based on them. For now, you can sort (or filter) in the UI – anytime you are looking to take action on them.
